Yellow against the evil forces

In all of Sweden, Lussekatter (or Luce-cats) is eaten in December and until Christmas. The tradition of baking saffron bread in various forms came to Sweden from Germany in the 18th century. Then we started using yeast in the sweet wheat dough, and with the precious saffron spice, the fluffy cat got both its taste and golden yellow color. The shape of the bread often had its origins in ancient designs. Many landscapes had their own figures and names. Some are inspired by life on the farm, such as kuse (horse) and boar (pig). The name Lussecat (Luce-cat) is much older than the tradition of celebrating Lucia and refers to the fact that the yellow saffron color was considered to protect against Lucifer, the evil one, who, according to folklore, sometimes appeared in the form of a cat. I bake a traditional variant every year (in various shapes) but also this variant filled with vanillabutter (kids favourite).
